Pancakes

This recipe comes from Mamaw

Ingredients:

Egg 

1 ¼ Cups 

Flour 

1¼ Cups 

Milk 

1 tsp. 

Sugar 

2 Tbsp. 

Oil 

1 ½ tsp. 

Baking Powder 

   

½ tsp. 

Salt 

 

Directions:

  1. Beat egg.
  2. Add milk and oil.
  3. Stir in dry ingredients just until moist.

Pour by spoonful onto hot, greased griddle.

Corn Bread

This recipe comes from Bonnie.

Ingredients:

2 Tbsp 

Shortening 

3 tsp. 

Baking Powder 

¾ Cup 

Cornmeal 

¾ tsp. 

Salt 

1 Cup 

Flour 

1 Cup 

Milk 

1/3 Cup 

Sugar 

Egg, beaten well 

 

Directions:

  1. Melt shortening in pan.

Mix rest of ingredients, pour into pan and bake for 20 min. at 425°.

Biscuit Supreme

This recipe comes from Grammie Braday.    

Ingredients:

2 Cups Flour ½ tsp. Cream of Tartar
½ tsp. Salt 2 tsp. Sugar
4 tsp. Baking Powder ½ Cup Shortening
2/3 Cup Milk

Directions:

  1. Mix together the flour, salt, baking powder, cream of tartar and sugar.
  2. Cut in shortening until mixture resembles coarse crumbs.
  3. Add milk all at once and stir just until dough follows fork around bowl.
  4. Pat or roll to ½” thickness on lightly floured surface.

Cut out and bake on ungreased baking sheet at 450° for 10 minutes.

Makes about 9 biscuits.

Banana Carrot Bread

Ingredients:

Lg. Ripe Bananas 

1 tsp. 

Baking Soda 

1 Cup 

Brown Sugar 

½ tsp. 

Salt 

¾ Cup 

Salad Oil 

½ tsp. 

Cinnamon 

Eggs 

½ tsp. 

Nutmeg 

2 Cups 

Flour 

1 Cup 

Carrots, finely grated 

 

Directions:

  1. Combine bananas, brown sugar, salad oil and eggs in mixer.
  2. Sift flour, soda, salt, cinnamon and nutmeg together in large bowl.
  3. Stir in banana mixture.
  4. Fold in carrots.
  5. Spoon into greased and floured large loaf pan.
  6. Bake @ 350° for 40-50 minutes or until done. (Test by inserting a toothpick in the middle. If it comes out clean, bread is done.) Do not over bake!

Banana Bread

Ingredients:

½ Cup Shortening ¾ tsp. Baking Soda
1 Cup Sugar 3 Lg. Ripe Bananas
3 Eggs ½ Cup Nuts (Walnuts or Pecans)
2 Cups Flour 1 tsp. Vanilla

Directions:

  1. Cream shortening and sugar together until fluffy. (This takes quite a while!)
  2. Add eggs one at a time, beating well after each addition.
  3. Add flour and baking soda to egg mixture.
  4. Blend in mashed bananas, nuts and vanilla. (Don’t mix too much here!)
  5. Bake @ 350° in greased loaf pan for approx. 1 hour and 15 minutes. (Test by inserting a toothpick in the middle. If it comes out clean, bread is done.)

This bread freezes very well for up to 6 months!

Dutch Babies

Ingredients:

3 Eggs ¾ Cup Flour
¾ Cup Milk ½ Stick Butter

Directions:

  1. Beat eggs in blender
  2. Pour in milk while blending
  3. Pour in flour and blend well
  4. Melt ½ stick butter in a cast iron skillet (or pie pan)
  5. Pour the batter into the pan and bake at 400° for 20 minutes

Drizzle with lemon juice and powdered sugar glaze
