Coconut Shrimp

Ingredients:

1 ¼ Cups Flour ½ tsp. Salad Oil
1 ¼ Cups Cornstarch 1 ½ Cups Ice Water
6 tsp. Baking Powder 2 Cups Coconut
½ tsp. Salt 1 Lb. Raw Shrimp
¼ tsp. Pepper Shortening for frying

Directions:

  1. Mix all dry ingredients for batter.
  2. Add oil and ice water and stir to blend.
  3. Heat oil to 350° in deep fryer or electric skillet.
  4. Spread coconut on a flat pan a little at a time, adding more as needed.
  5. Dip shrimp in batter, then roll in coconut.
  6. Fry in hot oil until lightly browned. (About 3 minutes each.)
